Bell Pepper Salad
If you like bell peppers, this beautiful salad made of roasted green and red bell peppers from North Africa (Morocco and Tunisia) will be a real treat.
Yield 4 servings
Time 30 minutes
Tools broiler pan
clean kitchen towel
non-stick frying pan
wooden spoon
small bowl
whisk
Ingredients 2 green peppers, quartered and seeded
1 red pepper, quartered and seeded
3 T olive oil
2 T onion, minced
1 clove garlic, minced
2 medium, very ripe tomatoes, peeled, seeded, and diced
? t salt
1 t ground cumin
? t cayenne
? t balsamic vinegar
pinch salt
black pepper
Directions Preheat broiler.
Place peppers skin-side up on broiler pan in a single layer. Broil 6 inches from the heat, moving them occasionally, until they are evenly charred - 10 to 13 minutes. Remove from broiler, cover with kitchen towel, and let sit for 10 minutes. Peel both color peppers. Dice the green ones and set aside. Arrange the red pepper quarters on one large or four small plates and set aside.
Heat 2 T oil over medium-high heat, sauté onion for one minute, then add garlic and sauté for another 30 seconds. Add green peppers, lower heat to medium, and cook, stirring frequently, for 5 minutes.
Stir in tomatoes, salt, cumin, and cayenne and cook until some of the liquid boils away, about 6 minutes.
Whisk together remaining T oil, vinegar, salt, and pepper. Pour over the red peppers, then top with green pepper mixture. Serve now or refrigerate and serve cold.
Barbecued Tofu Sandwich
One of the things I miss most as a veggie is barbecue sauce, since it's typically eaten with steak or ribs. What can a vegetarian eat barbecue sauce with? I've just learned the answer: fried tofu. Give this barbecued tofu sandwich a try - you won't believe your taste buds.
Yield 4 sandwiches
Time 45 minutes
Tools Colander
Kitchen or paper towels
Knife
Large frying pan
Spatula
Ingredients 1 pound extra-firm tofu
3 T vegetable oil
1-1? c barbecue sauce
4 sandwich rolls or pitas, sliced open
Directions Drain the tofu, squeeze out excess water, pat dry, and cut into ?-in slices.
Heat the oil in the frying pan, add the tofu slices, and fry until golden brown, 3-5 minutes. Flip and repeat.
Pour the barbecue sauce into the pan and stir so that each tofu slice is coated. Turn off heat and let marinate for 30 minutes.
Three options:
Make into sandwiches and eat lukewarm.
Heat the tofu in the bbq sauce for 5-10 minutes, make into sandwiches, and eat hot.
Put the tofu/bbq sauce in the fridge until you're ready to make it into sandwiches and eat cold.
Notes These bbq tofu sandwiches are great plain or topped with additional ingredients like onions, green pepper, and mushrooms
Fruit Smoothie
Cool and refreshing, smoothies are a delicious and nutritious way to quench your thirst and even satisfy a minor hunger.
Yield 1 smoothie
Time 5 minutes
Tools Blender or food processor
Ingredients 1? c frozen fruit
OR
1 c fresh fruit + 3 ice cubes
? - 1 c liquid
Additions (optional)
Directions Place all of the ingredients in the blender or food processor and process until there are no visible chunks of fruit. If smoothie is too thick, add more liquid. Too thin, add more fruit.

If you use frozen fruit, be aware that the first minute or so of blending will be *very* loud, so if you have neighbors or sleeping kids, don't make smoothies too early in the morning.
In terms of texture, portobello mushrooms are probably the closest vegetarian alternative to steak. While you won't be able to fool meat eaters with a grilled portobello mushroom sandwich, you might convince them that a great meal doesn't necessarily have to include meat.

Ingredients Large portobello mushroom
1-2 T olive oil
salt
pepper
4 pieces of bread or toast
Directions De-stem the portobello mushroom, then slice it in half lengthwise.
Brush each slice with oil and sprinkle with salt and pepper.
Arrange the mushroom slices on the grill or skillet and cook until brown, about 5 minutes on each side.
Assemble the sandwiches with your favorite fillings and serve!
Notes Aside from the mushrooms, you can put anything you like on the sandwich. Here are some suggested fillings - experiment to find what you like best.

Stir fry with tofu. Use carrtos, onions, red peppers, porto shrooms, scallions, bean sprouts......any kind of veggie. If you use carrots or onions though, a touch of brown sugar works wonders. If you eat eggs egg drop soud is fun, you can buy some mixes at stores. Noodle dishes with asian sauces. Rice dishes, indian/mexican/chinese style. Or, you can be really lazy like me and pack crunch veggies+hummus and a salad or baked potatoe for work or school and call it a meal. You can aslo save all the odds and ends of veggies from cooking, and make it into veggie broth. Boil the veggies together, for a lonnnnnnnng time with herbs and such and then strain a couple of times. It's good during the winter, add potoatoes and noodles for heartiness.
I go to a vegeatarian school so I have to eat veg.
