Im running out of recipes lately , my taste is getting a bit bland and im wondering if anyone had a recipe to share or some helpful websites :)
btw: im not one for lots of tomatoes , a few is okay but exsesive amounts make me want to gag. Also im not one for lots of tofu. i prefer the organic approach :)

Cabbage on the Grill [8 servings]
1 large head cabbage
1 1/2 teaspoons garlic powder, or to taste
salt and pepper to taste
Preheat grill for medium heat.
Cut the cabbage into 8 wedges, and remove the core. Place all the wedges on a piece of aluminum foil large enough to wrap the cabbage. Season to taste with garlic powder, salt, and pepper. Seal cabbage in the foil.
Grill for 30 to 40 minutes on the preheated grill, until tender.

Moosewood Cookbook
Enchanted Broccoli Forest Cookbook

Then believe it or not... The Joy of Cooking. This is not a vegetarian cookbook like the others above. However, what is really good for is basic cooking techniques, and it talks about basic food staples and their attributes and usages.
Plus the recipes are tried and true. Pies, breads, fish (if you include fish in your diet), other desserts, soups, vegetable dishes galore, pancakes, sweet rolls, muffins, and well some vegetarian dishes and some vegetarian versions of meatbased dishes. It even has beverages, punches for parties, iced tea and alcoholic cocktails. I have two copies (one is a revised version). I prefer the spiral bound over the hard bound because the spiralbound lays flat on the counter. Some don't prefer it because the book is a little smaller with smaller type. It's worth having a few books around in the kitchen.
I was a vegetarian when there weren't many options in grocery stores or in restaurants. My mother can't cook. I didn't learn to cook until I became a vegetarian. I had to learn or starve. These books helped me immensely.
So don't worry about tomatoes or everything needing to be mexican or spicey.
Be open minded about vegetables. Try new varieties of things you already know like potatoes. There are a number of varieties like purple potatoes or golden potatoes. Beans are good for you, and with brown rice, make a complete protein. Lots of different kinds of beans, pinto, lima, great northerns, navy, anasazi, red beans, kidney beans, lentils (lots of those too).
Try some nutritional yeast over your popcorn sometime. Just a little. It's protein rich.
Asian recipes are really good for vegetarian, including Thai, Chinese, Japanese and Indian. Japanese flavors tend to be very subtle. Chinese can be very savory as opposed to spicy.
As for meat subs: Try seitan or TVP textured Vegetable Protein. Both are good in casserole type dishes.

i agree with the moosewood recommendation. i grew up on these recipes- they are really excellent- and the cookbooks are well designed. in fact, there are SEVERAL now- pretty much one for every taste- ethnic food, soups and salads, originals, etc. extremely comprehensive.
a lot of the recipes are simply meatless foods that don't require tofu- the idea was to make vegetarian food that everyone could relate to and feel good about. and it has worked. their restaurant has grown from a tiny basement cafe to a thriving business that the community and tourists flock to- proof that their food is not only vegetarian, but culinary friendly, as well.
