What to put on my shish kabobs...?

So I've got mushrooms, zuchinni, tomatoes, red and green bell peppers, and [ previously boiled ] potatoes on a shish kabob. I'm wondering what I should cover it with? Olive oil, italian dressing, etc... What would be good?

Italian dressing and pepper. Try some pineapple to add a little sweetness

Olive oil and salt and pepper.

The best thing would be meat, though. Try steak.

we use homemade vegetarian bbq sauce or garlic and oil.. You could marinate them for awhile before cooking, with some fresh herbs-rosemary, olive oil, and garlic make a heavenly marinade

here's a few of what i found

New Potato and Portobello Kebabs
4 new potatoes, such as red bliss (about 3 ounces each)
1 large portobello mushroom cap, about 4 ounces
1 (14 to 16-ounce) steak
1 1/2 teaspoons sea salt
1/2 teaspoon freshly ground black pepper
1/3 cup vegetable oil
1/3 cup balsamic vinegar
2 tablespoons chopped fresh rosemary leaves
2 tablespoons minced garlic

Spicy Beef Kebabs
1 1/2 to 2 pounds boneless beef sirloin
3 cloves garlic, minced
2 teaspoons smoked paprika
1/2 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/3 cup red wine vinegar
1/2 cup olive oil

i agree with beebs marinate the veggies for a while in a good garlic and herb and oil marinate! yum

Like you said italian dressing or some olive oil with some mrs. dash or garlic.

if you have enough for 2-3 skewers try different marinades and dressing and see wich one you like more

I marinate my veggie kabobs in teriyaki sauce. It gives them a great flavor!
