i was wondering what all of you vegetarians & vegans besides me eat on a daily basis because i'm searching for a better variety of foods?..

i'm not a veg but my sister is. She eats alot of soybeans, japanese food, food from this place called whole foods, food from henry's market, avacado menu items...
well i like to eat rice from a chinesse palce and tons of veggs
I am a big fan of veggie fajitas. If you have an indoor grill (like a George foreman grill) you can put just about any kind of veggies on them: Bell peppers, zucchini, all different kinds of mushrooms. Really your imagination is the limit. Grill them up and wrap them in a flour tortilla. Add some salsa if you'd like. Yum! Stir fry is good and easy too. Stir fry up whatever veg. you like w/stir fry sauce (I like kikkoman stir fry sauce) then add some already cooked rice or noodles and its ready.
I try to eat a new fruit every month =) try "weird" things out... I LOVE chirashi! I eat mine with sushi rice (my favoirte is brown sushi rice, rice venigar, sea salt, and agave), namasu (pickled daikon and carrots), sliced cucumber, avacado, green onion, spinach, korean chili pepper, & lemon grass. sometimes I put in a a veitnamese spring roll wrapper =)

As a Raw Vegan we use it in everything from Salad to Desserts.. savory to sweet.
not a vegan i converted some southern recipes into meatless recipes and one of my favorites is a pot of field peas and butter beans with okra steamed on top over white, wild or brown rice as desired. tx, dod

I'm an omnivore but my favorite food is 100% vegetarian... I love strawberries fresh off the plant and still warm from the sun!
Hopia!!its a bread with filling inside, it can be yam , or mongo beans, (pork sometimes,{i dont like the pork}), i buy the purple yam flavor.. its usually called UBE, and the bread doesnt have any eggs, just flour, sugar, corn oil and/OR butter. i buy it from asian stores, its amazing..
If avacados werent so expensive, and difficult to find decent ones, I would eat them like candy. Otherwise another favorite is hummus. Hummus with pita hummus, with chips, hummus sandwich, hummus, hummus hummus!!

I like red beans (azuki) and green beans, good to cook up and sweeten and make a drink out of in summer.... Low fat high fibre and protein
I am a vegetarian and love veggies such as avocados, carrots and broccoli. Soy hot dogs are a fave of mine as well as veggie burgers. I love most fruits too and am always willing to try new and exotic ones as well.

I eat a variety of ethnic food that don't even require meat, but my favorite substitute is Worthington's (fake) tuna fish. There are actually a variety of faux fish but this is my fave because I can make Tuna noodle casserole. My goal is to try and make some of my fave foods that I had while growing up, and this one def helps out. Even my in-laws who eat meat liked it.
I agree with Katie G. I love avocadoes and Hummus, there are just too many things too list here that I honestly can't live without. When your veg you eat so many things, like green cury and tofu super spicy with loads of veggies.
I think as vegetarians you can't be too picky you have to love the ability to try new things. I love Indian and Thai food best and always looking for new recipes.
