Vegetarian Food?!

Vegetarian Food?

I'm a vegetarian .. as of 1 month ago.
I've never been a meat eater .. i've just decided to completely eliminate meat out of my meals.
-anyways-

I've been eating a lot of rice .. steamed broccoli, carrots and asparagus .. fruit fruit fruit!!!

I've been eating the same thing for weeks.

Know of any good meals? Send em' my way =)

Doesnt have to be anything fancy, you see what im eating now .. lol nothing fansy :)

Do you like meat replacements? If so you can look for Bocca crumbles and make tacos with it. You just buy the taco kit in the grocery store and instead of using the ground beef you use the Bocca crumbles. You can use these substitutes to make a ton of dishes. Hope this helps!

It sounds like you should eat more beans and nuts just to make sure you get some protein in your diet. Also, Asian noodle dishes, fried rice, curries and stir-fries are always good for vegetarians.

You need to be sure to get protein, so eat beans & legumes & nuts. Not sure how strict you are, but fish & dairy will give you protein also.
Here are a couple things that I like which you could eat (I'm not a vegetarian):
Peanut butter & banana sandwich
Maramite on bread or toast with cucumber & tomatoes

I make a recipe for a green bean stir fry. I think it's really good.

1 lb green beans (tips removed, cut in half)
2 tbp. Hoisin Sauce (Or Black Bean Paste, if you don't want it sweet)
1 inch piece of ginger grated and peeled
1 tsp. Soy Sauce
1 tbp. Minced Garlic (add more if you like )
Peanut Oil

Heat a nickel sized drop of Oil, add ginger and garlic, sautee 1 min.
Add green beans and hoisin sauce, cooking 3-5 minutes.
Add Soy Sauce- cook 1 minute more (3 if you don't want your beans crisp.)
Serve with Rice or Rice Noodles.

it looks like you need a lot more protien in your diet. add beans, nuts, tofu, eggs, and cheese. The possibilities for meals are endless. Enchiladas, falafel, pasta & sauce, quiche. Here is a good one for easy crustless broccoli & cheddar quiche:

Butter, for ramekins
Coarse salt
1 package (10 ounces) frozen broccoli florets
6 large eggs
1/2 cup half-and-half
1/4 teaspoon ground pepper
1/8 teaspoon ground nutmeg
3/4 cup shredded cheddar cheese (3 ounces)

1. Preheat oven to 350°. Butter four 8-ounce ramekins (or a 9-inch pie dish); set aside. Bring a medium pot of salted water to a boil. Add broccoli; cook 1 minutes. Drain well; transfer to a cutting board, and blot dry with paper towels. Chop coarsely.
2. In a large bowl, whisk together eggs, half-and-half, 1/2 teaspoon salt, pepper, and nutmeg. Stir in broccoli and cheese.
3. Place quiche on a rimmed baking sheet. Ladle broccoli mixture into ramekins or pie plate, dividing evenly. Bake until golden brown, 35 to 40 minutes. Serve with crusty bread and a mixed-green salad, if desired.

mushroom burger one large flat mushroom garlic herbs and butter wrap up in tin fiol and oven bake 180 degres 15 20 mins place in a bun they are good.meat eaters love them as well so long as you dont mention the v word.

I became a vegetarian about 6 months ago,and I eat alot of the stuff from Bocca, Quorn, and Morning Star. They make some really good burgers and vegan crumble that use in place of ground beef. They also have vegetarian corn dogs and chicken patties. Anyway, you might want to check it out.

Pasta is really easy to jazz up. If I'm pressed for time, I'll take a jar of pre-made sauce and pour it over sauteed veggies (zucchini, bell peppers, and broccoli are my favorite additions).

I also make chili with one 28 ounce can of pureed tomatoes, 2 cans of beans (red kidney), one diced bell pepper, cubed tofu, and a diced onion. I sautée the veggies in a pot in about 2 tablespoons of oil, then pour in the tomatoes, and drained beans. I add the tofu, and chili spices to taste. Simmer 25 minutes, and you're ready to go.

One of my favorite sites for veggie recipes is vegweb.com. You can type in the ingredients you have or want to use, and it will give you a list of recipes.

Learn to love Tofu. IT' so versatile.

Basically, it's tasteless, and that's the beauty. You season it how you like, and it tastes spectacular. Here's something to add to your rice and broccoli stir fry

Cut extra firm tofu into cubes (after draining well) Large cubes are yummy for stir fry

put in a bowl with a couple TBS of soy sauce and a teaspoon of ginger powder.
Stir to make sure the sauce and powder get on all the tofu.
Let sit for 10 or 15 min while you get the rest of your stir fry going.

"Fry" tofu in non-stick pan. If you want, some sesame oil will give it a nice flavor, but you dont need it (in a non-stick pan)

Do the frying slowly over lower heat for best results. ADd to steamed broccoli and put over your rice.


Here's some things that will give good varaiety to your diet, but should be used sparingly. Right now your fresh diet is healthier, but the following things are yummy to throw in once and awhile for fun, if you don't overdo it and live off them!

Veggie meats: (learn to love the taste becase they're yummy, , without expecting them to taste like real meat)
Pasta: (make chese lasagna, spaghetti without meatballs, it's so easy to find Prego sauce w/o meat! Pasta can sooo easily be done vegetarian easily).
sandwiches: Get creative with hummus, veggie meat slices, chese, tofu, etc..

My favorite meal: Spaghetti. SO simple
Noodles cooked and drained
Prego sauce w/o meat.
Garlic bread (any good bread you like only needs to be buttered and sprinkled (to taste) with garlic powder.. Bake (watching carefully) and Tada!! garlic bread!
Garden salad (lettuce, tomato, cuke, celery, olives,carrot shreds, crutons, italian dressing)
to round out the meal cook yoruself some green beans, spinach, or whatever veggie you like. Add desert if desired.

You should try the frozen stuff by Boca and Morningstar. You'll still want to eat your veggies and fruits because of their pure health benefits, but I love Boca's veggie burgers/chik'n patties and Morningstar's meatless meatballs and ribs.

I also got an easy, 5 ingredient vegetarian cookbook when I became a veggie. It's a really good way to start out without feeling overwhelmed.

Mu suggestion in get the book Passionate Vegetarian by Crescent Dragonwagon. It gives tons of great recipes and describes how to cook all kinds of vegetables and grains.

Try picking up a new vegetable when you go to the store and then look up recipes to make it. I love eggplant, squash, zuchinni, sweet potatoes and cucumbers.
