Share your favorite vegan desserts!!!?

My birthday is next week and I am thinking about making myself a new vegan dessert. Anyone have a great tried and true recipe they would like to share? It doesn't have to be cake - I love brownies and cookies and anything sweet!

Chocolate Peanut Butter Pie
Makes 6 to 8 servings

* 1 12-ounce package non-dairy chocolate chips (about 2 cups)
* 1 16-ounce package firm tofu
* 1 1/2 cups peanut butter, crunchy or smooth (or more to taste)
* soymilk (to desired texture)
* 1 vegan graham cracker crust, such as Keebler’s Graham Cracker Ready Crust
* 1 cup non-dairy chocolate chips (optional topping)
* 1 cup chopped nuts (optional topping)

Melt the chocolate chips in a double boiler, saucepan, or microwave.

In a food processor or high-powered blender, add the melted chocolate chips, tofu, peanut butter, and ? cup of soymilk. Blend until very smooth, adding more soymilk if desired.

Pour the filling into a graham cracker crust and refrigerate for 2 hours.

MMM a chocolate cream pie using tofu... I don't have the recipe.. I found it on all veg recipes...

Absurdly Easy Chocolate Cake

Ingredients
? 3 cups flour
? 2 cups sugar
? 6 tablespoons cocoa
? 2 teaspoons baking soda
? 1 teaspoon salt
? 3/4 cup vegetable oil
? 2 tablespoon vinegar
? 2 teaspoon vanilla
? 2 cup cold water

Directions
Mix the dry ingredients. Add the wet ingredients. Stir
until smooth. Bake at 350 degrees for 30 minutes.
Makes two layers of a two-layer 9-inch or 8-inch round
cake, or one small sheet cake. When cool, frost it, if desired. It is also good just sprinkled with powdered sugar.

Schoolyard Oatmeal Cookies
(Makes 1 dozen)

1/2 cup whole wheat pastry flour
1/2 cup quick-cooking rolled oats (not instant)
1/4 teaspoon non-aluminum baking powder (such as Rumford)
1/4 teaspoon ground cinnamon
1/4 cup light molasses or sorghum syrup
2 tablespoons canola oil
1 tablespoon water
3/4 teaspoon vanilla extract
1/4 cup walnuts, coarsely chopped
1/4 cup raisins

Preheat the oven to 350° F. Coat a baking sheet with nonstick cooking spray, and set it aside.

Place the flour, rolled oats baking powder, cinnamon, and salt in a small mixing bowl. Stir them together and set aside.

Measure out the molasses or sorghum syrup in a small measuring cup. Then stir in the canola oil, water, and vanilla extract. Mix well. Pour this mixture into the dry ingredients along with the walnuts and raisins. Mix thoroughly.

Drop the dough by 12 rounded spoonfuls onto the prepared baking sheet. Flatten each cookie lightly with the back of a spoon.

Bake the cookies for 12 to 14 minutes, or until they are lightly browned.

Transfer the cookies to a cooling rack using a metal spatula. Cool the cookies completely before storing them.
