I like to make Veggie wrapes.. Grill or steamed veggies maybe get some soft shells, salsa cheese, sour cream.....LAy it all out and people can make their own wraps...
Just go to a super market or health food stores for fresh veggies and fruits. The more organic you can find is better it is. Also, a lot of vegans love Indian Curry, it is cheap, and easy to make. You can find a Curry powder from local Indian or Asian market. It comes with a direction how to prepare them, it is really simple basically you mix them with boiling water and cooked ingredient. Use ingredient like carrots, potato, Tofu, Shiitake Mushroom, Onion, and Garlic. On the aside, cook Brown rice to serve with.
A tofu salad with edadmame. A little thai spice sauce, romaine lettuce, raisins, walnuts, celery. Mix it up! PERFECT
Season the tofu with some sazon lightly cut them up in small pieces.

If you don't want to follow directions, you could make veggie wraps. Those are always quick and easy. Take tortillas and add whatever vegetables and dressing you like. Wrap them up and (if you like) grill them a little in the oven.
If you are doing finger food, you can put tabouli on endive leaves. Guacamole and corn chips is always good. If you're doing sitdown and thinking about doing the vegetable lasagna, you'll have to find a replacement for regular cheese, maybe soy cheese, since vegans don't eat dairy either. A good hearty vegetable soup works well. You can also stir-fry tofu squares and vegetables. You can split zucchini or summer squash and make a filling of breadcrumbs and herbs and bake it till the squash is just tender.
First do not panic. You can go to the store and get fom fruit & veggie trays. Then make Veggie pizza. For dessert make zukinni cake, pumpkin bread, and corn bread and make sure you have honey and butter for the guests. I hope all goes well. I hope you realise those parties are normally in the evening.
What about vegetarian spaghetti w/ whole wheat noodles (or regular noodles), salad and garlic bread? Your sauce can be made with
tomatoe puree or spaghetti sauce
green peppers
onions
mushrooms
yellow and green squash
salt
pepper
garlic (about 4 cloves)
olive oil ( 2 table spoons)
cut the veg tables in small pieces and saute them for about 10 minutes, add your sauce (you might needs little sugar to cut the tart taste from the tomato sauce.) You can purchase some Soy Parmesan cheese to top the spaghetti

Find noodles w/o egg (most of your normal spaghetti noodles should be fine)
Get some Prego w/ veggies and no meat. DOuble check ingredients to make sure there is no cheese
Garlic bread: Find a nice french style bread that has no egg or whey in it. (might have to check a few brands). FInd a margerine made purely from vegetable oil w/o whey (Smart Balance LIGHT should be totally vegan) Butter the bread thickly and sprinkle thickly w/ Garlic powder. Bake
Garden Salad (lettuce, tomatoes, carrot shreds, celery, olives, cucumbers) Get crutons if you can find some w/o chese or other milk products (This may be slightly hard) For dressing get a vinagarette and check ingredients for no chese. With some browsing, you should be able to find an itallian dressing or vinagarette w/o chese or whey or dairy.
Green Beans, Broccoli, Corn or a nice veggie for a side disn
Boom.. totally vegetarian meal that is easy to fix, vegan, and you can have the whole meal made in about 40 min (the length of time it takes your water to boil and spaghetti to cook)
1) Boil baby carrots for 30 minutes and mix in some honey (or agave nectar) and sprinkle with tarragon.
2) Salad with a variety of dressings to choose from
3) Veggie skewers with broccoli, zuchini, mushrooms, onions, tomatos, and pineapple.
4) Fruit salad

Could be fun to do a themed event..noticed the mentions of Italian fare. Here's another one for consideration: south of the border inspired: Veggie Chili, Chips and Guacamole, Mango Coconut Cheesecake, and Margaritas.
Vegetarian Chili (makes about 6 cups)
3 tbsp oil
4 cloves garlic, minced
1 medium onion and one medium green pepper, chopped
1-15 oz can of each: chickpeas, kidney beans, and black beans - DO NOT DRAIN
2 cups chopped spinach
1 cup frozen corn
1/2 cup finely shredded carrot
1-28 oz can crushed tomatoes - not diced!
2 tbsp chili powder (more to taste)
1 tbsp cumin
1 tsp dried oregano
In large pot, saute onion and pepper in oil for 3 minutes. Add remaining ingredients, including beans with liquid, and allow to simmer over medium-low heat for 25-30 minutes, stirring as necessary. Add salt and black pepper to taste. Consider adding red pepper flakes or hot sauce for extra kick. Serve warm.
Guacamole (makes about 1 cup)
2 ripe avocados
1 small tomato, finely chopped
1 small onion, finely chopped
juice of 1/2 lime
salt and pepper to taste
Peel and roughly mash avocado into bowl. Remaining ingredients and stir until combined. Refrigerate for at least 1/2 hour before serving.
Mango Coconut Cheesecake
Follow the recipe listed below (might be advisable to adhere to the suggestions of adding flour to the cheesecake mix). FYI: White sugar is listed as an ingredient, but is NOT vegan. Use natural sugar from a health food source. Add 1 pureed mango and 1/2 cup shredded coconut to mix before pouring into shell. When cheesecake is done, consider decorating with additional chunks of mango, coconut and drizzle of real maple syrup.
P.S. The chili usually comes out thick enough that you could even consider putting it in tortilla or taco shells.
There are tons of recipes on the web, for sure. I just want to add that if all of the people attending are not vegan already I owuld not go too wild with the food. Avoid to much tofu and weird stuff - stick to familiar, fresh foods so you don't freak out the meat eaters! Lasagna is an excellent idea and so are the wraps or a big salad bar.
