Bees are a part of life.
I think that is a matter of personal choice versus what is an amimal. Bees are insects, which technically doesnt qualify as an animal. They flock to and from flowers, fruit trees and other plants, where they recycle the nectar. Raw honey versus processed honey has a different nutrional content, which may be the reason why some chhose not to eat it, because they may not benefit from the effects it may have on the caloric intake, or dental health from not having meat and other types of protiens/vitamins.
The simplest reason why honey isn't vegan is by definition. The term vegan was coined by Donald Watson in 1944 and was defined as follows:
Veganism is a way of living which excludes all forms of exploitation of, and cruelty to, the animal kingdom, and includes a reverence for life. It applies to the practice of living on the products of the plant kingdom to the exclusion of flesh, fish, fowl, eggs, honey, animal milk and its derivatives, and encourages the use of alternatives for all commodities derived wholly or in part from animals (Stepaniak).
Honey is bee-babyfood. Would you steal milk from a baby?
Vegans believe in nonviolence, and imprisoning bees for their product is violent and wrong. There are many alternatives like Agave you can use in place of honey; there is no reason to enslave any animal on this Earth for any reason.
As a vegan I don't split my beliefs of nonviolence into groups like mammals, insects, fish, etc.; I respect all living creatures alike. It is the same love and resistance that keeps you from cooking up and eating your pets, but I choose to use that same compassion for all creatures.
