Do avocados oxidize and turn brown like apples do when they are cut and peeled?
Answers:
EverFresh is available in the grocery store near the canning supplies and I use it all the time for keeping my guacamole and apples from turning brown. In fact I made guacamole last night to take on a trip today and I have absolutely no fear it will turn brown at all. I like it better than lemon or lime juice because it doesn't add so much flavor.
Yeah they oxidize even faster than apples - use lots of lemon juice to curb them browning so fast. If you're making guacamole I'd make it as soon as you can close to serving time.
yes
Yes, avocados will oxidize, but I disagree that they will do so at a faster rate than apples. From my experience, they brown at a slower rate than a cut apple...
To keep your avocados nice and green -- whether they are just halved or used in a guacamole -- use anything acidic to prevent oxidation (juices from citrus are especially good because they contain high amounts of ANTI-oxidants). An additional way to prevent the browning is to cover the avocado with plastic wrap, being sure that the wrap touches the fruit. If you've made guacamole and have it in a bowl, cover with plastic wrap so that its actually touching the dip. You can easily make guac last overnight if you do this.
