I am going vegan, what's good to eat?

I was a vegetarian for almost 3 years but I want to take it up a notch. What are some good, easy, and somewhat filling snacks that are vegan?

congratulations on your decision!

I am sure you will think of plenty delicious recipes yourself. Speaking from experience, I discovered so many great recipes and new foods since becoming vegan. And food tastes so much better when the natural tastes are not disguised in animal fat (I have cheese in mind just now...)

So, snacks ideas.

1) Houmous or smoked tofu or seitan on bread with veggies like peppers, lettuce, tomato, cucumber.

2.) Porridge (4-5 table spoons of rolled oats + some dried apricots and/or prunes + teaspoon flaxseed soak in hot water for 15 minutes then make a smooth cream of it using a food processor, add fresh fruit (berries, grapes, diced apple...) or cocoa powder or cinnamon if desired).

3.) Dried fruit balls (a handful of dried fruit (like apricots, figs, dates) and a handful of nuts finely chopped (use food processor), with a spoon of 100% fruit content jam/ confiture ( you can add some flaxseed, too), shaped into bite-size balls and rolled in cocoa powder/coconut)
[yes, it is prunes/apricots again - full of iron! and flax seed for good fats and omega 3]

4.) Fruit / nut / seed /quinoa bars you can buy in a shop

5.) crisps (but not too often; also, make sure they're vegan)

6.) smoothies (banana+kiwi and banana+berries are my favourites)

7.) all sorts of salads... My favourites are
- lettuce with cherry tomatoes, radish and sweetcorn
- white cabbage and potato salad - make sure you add some good quality pumpkin seed oil

8.) Soya yoghurt (plain with berries or with pumpkin seeds, mmm)


So... these are some snacks. Otherwise, I find risotto, pasta, cous cous, lasagne, soups, stir-fries... easy to make and delicious!

the best ethnic food that is actually indian food most or it is vegan and if it is prepared well it can be very filling my moms friend is vegan but she isnt a good vegan she eats junk food so as long as you have a big pallet of food that you like than their are cookbooks that are all vegan and ive found many recipies that are quite good

Vegan - Hearty Root Soup


6-8 servings 1 hour 20 min prep

4 potatoes, peel and diced
1 onion, chopped
1 garlic clove, cut in half
1 parsnip, peeled and diced
2 carrots, peeled and diced
1 turnip, peeled and diced
1 celery root, peeled and diced (celeriac) (optional)
1 fennel, diced (optional)
1 leek, washed and thinly sliced
1 rutabaga, peeled and diced
1 (15 ounce) can vegetable broth
1/3 cup barley
1/3 cup cilantro, washed and chopped
4 cups water
salt and pepper


In a large saucepan add all ingredients and bring to a boil.
Simmer until all vegetables are soft and barley is cooked, about 40 minutes uncovered.
Add additional water if needed.
When done you can mash a little with the potato masher or eat as is.

strickly vegetables, water, juice, cocoa, white cake made with water no milk, crackers, certain types of chips, fruit cocktails, any fruit , certain candies, etc. i hope i helped

whole foods markets and other organic grocery stores offer a lot of vegan offerings... its almost easy to be a vegan these days with all of the new products out there!

try shopping at the whole foods market, but you still have to be careful about what you eat, stuff that has WHEY in it is actually MILK. look up some of that stuff online and you will see, you would be surprise at what you are eating.

My favorite vegan snack is carrot sticks & hummus. Or fresh avocado, scooped out of the shell and spread on a bagel. Or peanut butter on crackers. All are filling, and yum! Of course, check your bagel & cracker labels to make sure they're vegan - some are, some aren't.

i don't know if you're more into natural-foods or processed foods, but i am pretty much eating the same things i ate as a vegetarian (all i had to rid of was eggs), especially with the increasing amount of vegan-friendly products, like vegan butter (check out //www.earthbalance.net/product... because they rock - actually tastes better than butter in my opinion).

when i cook things that ask for eggs, i use 1/4 cup applesauce. i use Earth Balance's Whipped Spread when a recipe asks for butter or margerine. and i use soy milk to replace cow milk.

it's rather simple. but on my part again, i love cooking and cook all of my own meals as well as vegan dishes for my family and friends, and i am always provided with vegan-friendly foods when i go to friends' houses.

as for health, i have noticed myself being more energetic and healthier than i have been in years.
