It is quite simple really; chickens (and fish) are animals, and vegetarians do not eat animals.

Yes. Call it meat, call it poultry, it's still the flesh of an animal. Vegetarians don't eat any kind of animal flesh. I don't know where people get these ideas that chicken and fish come from plants or something... :)
