US (well, more so nowadays, its a growing trend it seems)
Not sure what exactly you mean by societies, but if you mean religion/culture, I'll answer according to that:
Religion:
- Jain
- Hindu (well, not beef or any other cow meat at least; depending on which type of Hindu you are, the religion determines whether one is to follow vegetarianism or not)
- Sikh
- Buddhist (def. not strictly so, but its popular)
- umm others I don't know of?
Culture:
- Brahmin (India)
Sorry, most of my awareness seems mainly limited to India (simply because my family is from there). I'm sure there are more though.
ummm....too lazy to search for more but I can tell you where vegetarianism is NOT popular, based on memory, hopefully that will also help:
France (quite sure about this one)
Australia (meat seems far too important in this culture)
South-Eastern US (e.g. Alabama, New Orleans, Mississippi)
South America (esp Uruguay)
Muslim countries (e.g. Pakistan)
East & SouthEast Asia (not sure about this, I know that meat is an important part of their diets though)
Note that the list I just provided does not mean you can't find good vegetarian stuff there. Its just a list I remember off the top of my head, based on what I've heard/read.
