I know they always use carbonated water, but why?
Answers:
The presence of carbon dioxide actually actually intoduces carbonic acid to the drink. This acid gives "bite" just like in juices and such particularly citrus. Orange juice would taste a lot different if there were no citric acid, same goes for soda. When the carbonation in soda dissipates, so does the acid, and that gives you the "flat" taste.
It would be 'flat' if you didn't carbonate it and therefore not very popular with the buyers. $$ that's probably the bottom line.
If it was not carbonated, it would be just juice. The first marketed soft drinks (non-carbonated) appeared in the 17th century. They were made from water and lemon juice sweetened with honey.

I think it's because people like the way the bubbles feel when they're drinking it. It wouldn't be as good without the bubbles, right? But, as far as I can see the bubbles do not affect the flavor of the soda. Have you ever drank soda water it tastes kinda salty, but other than that it's flavorless.
I like the fizz. Sometimes when I'm thirsty that's all that really helps. I think that's it with most people . It freshens your tongue and throat with the refreshing bubbles.
