Ingredients
Pav(Burger buns)
Onions - 2 nos
Potatoes - 2 nos
Cauliflower - 1/2 cup
Carrot - 1 no
Green Capsicum - 1 no
Red Capsicum -1 no
Tomato paste or Fresh tomatoes - 2 nos
Pav Bhaji Masala - 1 tsp
Ginger-garlic paste - 1 tsp
Red Chilly Powder - As reqd
Salt - As reqd
Veg oil - 2 tbsp
Mustard seeds - 1 tsp
Cumin seeds(Jeerakam) - 1 tsp
Coriander leaves(chopped)
Lemon juice - 1 tsp
Butter - 2 tbsp
Preparation Method
1)Chop the potaotes, carrots, cauliflower, green and red capsicum.
2)Pressure cook them with salt, till it gets cooked(about 10 min).
3)Drain the water and mash the vegetables, so that it becomes a fine paste. Keep it aside.
4)Heat oil in a non-stick pan.
5)Add mustard and cumin seeds and allow them to splutter.
6)Add onions and fry, till it becomes translucent.
7)Add Pav-bhaji masala powder, garlic-ginger paste, salt and red chilly powder.
8)Add tomato paste or finely chopped tomatoes and cook for 5 min.
9)Add the mashed vegetable paste and mix well.
10)Add butter and lemon juice.
11)Garnish with coriander leaves.
12)Slightly toast the pav(burger buns) with butter on a tava.

Ingredients
Boiled potatoes 3
Peas, frozen 1/2 cup
French Beans, frozen 1/2 cup
Canned tomatoes 1 can
Onions 2
Garlic 6 clove
Red chilies 2
Pav Bhaji masala 2 1/2 Tblspoon
Butter 2 Tblspoon
Oil 3 Tblspoon
Salt to taste Red chili powder 1 teaspoon
Turmeric/haldi powder 1/4 teaspoon
Corainder 1 Tbsp
Preparation:-
1. Boil, peel and mash potatoes roughly. If using frozen peas and french beans, add 1 Tabelspoon water in a microwave safe casserole and cook for 1 1/2 minutes. The vegeatables should be tender. Alternatively if using fresh peas and french beans, boil or steam till tender.
2. Grind garlic and red chilies to a paste. Finely chop onions.
3. Heat oil in a pan and add onions. Cook till light brown. Add garlic paste and fry for a 1-2 minutes
4. Add tomatoes and cook for 4-5 minutes. Mash them well while cooking.
5. To this add salt, red chili powder, turmeric powder and pao bhaji masala. Mix well and allow to cook till oil starts to seperate.
6. Add peas and french beans. Mash them well, while they are being cooked.
7. Add 1 cup water and allow the vegetables to cook. Add mashed potatoes. Cook for a 5-7 minutes. Mash them well while cooking.
8. Add butter and lemon juice, minutes before serving. Garnish with chopped coriander.
9. Serve bhaji with buns(pao). Heat a non-stick pan, add butter and heat buns(pao) till they turn soft.

500g potatoes, boiled, peeled and diced
1 c cooked small chopped mixed vegetables - carrots, beans, peas, cauliflower
1/2 c chopped onions
1/2 c ghee
4 green chilis, slit and chopped
1/2 inch ginger, sliced finely
250g tomato, chopped
1 tsp red chili powder
1 tsp ginger garlic paste
salt to taste
5 tbsp butter
1 tsp garam masala
a bunch of fresh coriander leaves, chopped
2 tbsp lemon juice
lemon wedges for garnish
4 pao or buns, halved
Method
Heat ghee in a pan. Reserve 3 tsp chopped onions for garnish and fry the remaining till light brown. Add green chillis, ginger and tomatoes and saute over medium heat for 2-3 minutes. Reduce heat, then add the red chilli powder, mixed vegetables and potatoes.
With a metal spatula, simultaneously mash and stir for 5 minutes. While stirring, keep sprinkling the ginger garlic paste, dissolved in 6 tablespoons water. Add salt and two thirds of butter. Increase the heat and stir well.
Sprinkle garam masala, coriander leaves, lemon juice and remove from heat.
Garnish with remaining chopped onions.
Apply the remaining butter on the bun-halves, place them on a pre-heated frying pan. Fry until golden brown on both sides. Serve with the bhaji and a lemon wedge.
