I have always wondered what aged beef is? Doesn't it spoil if you age it?

When you buy it, it only stays good for a few days. How do they keep it from going bad when they age it? Or, does "aged beef" mean something different?

What keeps it from spoiling during the aging process? Being a former chef and having 20+ years in the trade, most meat is wet aged and is allowed to age for 20-28 days, there is dry aged that is allow to air dry for the same time and sometimes more.

As the meat is allow to age the meat becomes more tender and like cheese takes on a more earthier taste. It is only beef that is aged, poultry and pork are not age unless processed for sausage or smoked products.

If you want to find dry aged or beef that has been age for more than the norm at the grocery store you will have to find a butcher that specialzes in "Prime" beef, check your phone directory. no, it just means that the beef is old

some people like the way it tastes that way Sour cream is a good example of aging and spoilage and yet it is convented by many adoring consumers. Aged beef is in deed aged for a day or two , meaning that bacteria have had enough time to break down the meat so that it is tender,when one buys aged beef it is usually not with the intent to freeze it and defrost it for consumption later, but rather to be eaten almost immediately that day.
