What are you cooking or eating for the fourth?

My own famous oven-baked BBQ chicken here.


Answers: Here in New England we're having a clam boil. Steamer clams, lobster,potato hot dogs chirico(portugese sausage), served with clam broth and melted butter. Wish the corn was ready! Strawberries and whipped cream for dessert. Wanna come? Good old fashioned burgers, hot dogs, potato salad, baked beans, and of course apple pie. We do it international and call it the great Melting pot picnic.
I make a swiss and monteray jack cheese fondue and use Chibata bread.
We have as main courses ...
Tamales
Pot stickers
Fried Chicken
Bratwurst
Sides are ....
Ambrosia salad - recipe at the bottom
Amish potatoe salad
Vegetables shishkababs - with corn on the cob segments
Boston Baked beans
Indian curry rice
And anything else anyone can think up that they want to bring but we make sure no one brings the same thing.
Hot dogs for the kids are a must though.
Ambrosia salad recipe
4 apples chopped - Fujis are the crispest
3 pears chopped
3 mangos pealed and chopped
1 pint of strawberries halved and sliced
1 can of peach chunks
1 can of pineapple chunks
1 can of mandarine orange segments
6 bananas sliced and quartered
1 lrg box of raisins
1bag of slivered almonds - they stay crunchy longer than pecans
1 small bag of shredded sweetened coconut
1 small tub of of whipped topping
1 1/2 cup of miracle whip salad dressing
1 3/4 cup of regular mayonaisse
Mix prepared fruit in large (and I do mean large) mixing bowl including the raisins, almonds, and coconut.
Squeezed a half of a large lime all over and mix again - keeps fruit and bananas from turning mushy and brown.
Add miracle whip and mayonaisse and fold into the mixture
Now add whipped topping and gently fold in.
Put in refrigerature covered the day before then let stand in refrigerator for 2 hours before serving.
I never have anything leftover to save!
