Baby Back Ribs


Answers: It is a shame to boil baby back ribs--and not necessary. Their larger cousins might benefit from it--but most rib chefs will tell you that low and slow is what is needed. What that means is low grill heat and cooking of the ribs for several hours.

If using a charcoal grill, indirect heat will do the job. That means having your hot coals to one side and the meat on the opposite side of the grill--top down of course.

Brine the ribs overnight with kosher salt and sugar melted in apple juice. Cool the juice and put ribs in a food safe container, cover with the juice and weight the ribs down if necessary.

When it's time to cook, take the ribs out, dry them off and rub them with a dry rub of your choice.

Grill them until browned well on both sides, turning often--this should take about 30-45 minutes--depending on how many ribs you are cooking--keep grill closed the rest of the time.

Once you have gotten this part done, put the ribs in metal foil, brush them down with your favorite sauce, close them up and cook in the grill for approximately 1 hour longer--you should be able to wiggle a rib to check for doneness. Take them out of the foil, and turn up the grill if using gas or put them directly over the coals if using the indirect method. Remember, most BBQ sauces contain some form of sugar, which will cause the ribs to burn so keep turning them and bathing with sauce for another 10 minutes--top open on grill.

Serve immediately or put in a pan in a warm oven while getting everything else ready. Put bowls of sauce with paint brushes on the table, cut ribs into serving size pieces and have a good time! Source(s):
I am a personal chef You smoke them. broil them in beer and BBQ sauce before you cook them let them simmer for a while pre-cook them on the stovetop with about an inch of water, slowly until they are tender....then slather on your best sauce and grill for that great flavor!....enjoy do a web search for a reciepe Put them in a baking pan and cover them with a mixture of beer, onions and a little garlic. Cover them with foil and put them in the oven at 225 degrees for 3-4 hours.

Then take them out and let them stand for about 20 minutes. Slather on your favorite BBQ sauce and toss them on the grill bone side down for about 10 minutes, turn them over and let them cook another 10 minutes. Be sure to keep basting them while grilling.

The meat will literally fall off the bone.
