Whats a good way to cook perch?


Answers: Perch needs to be fried, it's just that kind of fish, and believe me, I know, I used to eat it all the time.
FRIED PERCH

12 fish
Pepper
Salt
1/2 c. flour
1/2 c. cornmeal
Crisco or cooking oil

Salt and pepper fish. Roll in flour and meal (mixed). In large skillet (cast iron is best) melt Crisco. heat to piping hot. Fry fish until brown, approximately 10 minutes each side. Delicious with French fried potatoes and crisp green salad. Serves 4. Source(s):
cooks.com Technically, any white fish can be substituted for any other white fish. However, I've found issue with that more often than not. Perch in my opinion is kind of a fried/bake-fried fish. Best as a fish N chips kind of thing. Dip in egg wash and crushed cornflakes.
Have oil very hot and fry for 3 mins. per side.

Use egg wash and flour to which you've added salt and pepper.

The secret to cooking fish is to have your oil very hot. This is a good basic recipe for perch or any panfish. Heat canola oil in a fry-daddy or deep frying pan to 350 degrees. Mix one cup milk and two medium eggs with a wire wisp. I would suggest using a good fish seasoning or another kind of seasoning mix and mix with cornmeal. 2 cups cornmeal and 2 tablespoons of seasoningis about right. dip fish in egg-milk mixture then coat well in cornmeal. Fry till golden brown or till fish float. Enjoy I brush the Perch with a little olive oil and lemon juice and then grill it. It's delicious and good for the figure too.
