Answers: it prevents oxidation or something and keeps something from breaking down in the tomato. they don't taste sweet like they should. i can't remember exactly but alton brown told me not to put them in the fridge if you want them to taste good. of course, they don't last as long if you leave them out. Cold changes the flavor. Eat fresh vine ripened tomatoes room temperature. i don't eat them very often, but i do like them from the ridge, i don't like room temp tomatoes. they taste better to me cold. I do it and I prefer them cold there is nothing wrong,i keep mine in the lower drawer of the fridge, makes them last longer There's nothing wrong per-say about your choice of chilling tomatoes in the refridgerator. However, tomatoes are best when eaten within a few days of picking from the vine. Keep in mind if you want to store them, you should use your crisper drawer to ensure they don't turn rotten.
With the chemicals they use to treat most store-bought tomatoes, it's a wonder they ever turn rotten; they harvest them green and inject them with a chemical to make them turn red.
Eat locally grown, organic produce to help your environment, local economy, and yourself! Take care. When you put tomatoes in the fridge, their texture becomes mealy. Room temperature is best, but as you can see, some people just prefer them cold. Nothing wrong with keeping them in the fridge. But, it does diminish the taste. So, its a bit of trouble, but let them get to room temp before slicing them. That keeps the flavor, then you could re-chill them. I like them cold, too. Fresh summer tomatoes probably keep their flavor best. But, the winter ones that are grown in hot-houses probably aren't going to have that much flavor no matter at what temperature you keep them. they lose flavor when put in the fridge.
