More than you could manage to eat. I'm assuming that you're talking about the toxins found in and around the eyes of potatoes and near the skin, most of which are destroyed when cooked. None of them are present in levels sufficient to cause death, even if you ate lots and lots. You'd run out of room and be sick from overeating long before you'd be seriously poisoned in any way.
