How can Wendy's claim their burgers are "fresh, never frozen"?

What's their secret?


Answers:

At one of my restaurants, we sell burgers (although we're not Wendy's), and ours are also fresh, never frozen.

It's just a matter of ordering the beef--it's already in the patty shape--in the right amounts, and keeping it refrigerated. The kitchen manager has to exercise good judgement; if too much beef is ordered at one time, there's a risk that it will spoil and have to be thrown away. If too little is on hand, there's a chance we'll run out of burgers! Also, the beef kept on hand is rotated, so the "oldest" meat is always used first (although it's never more than three days old).

BTW, if a restaurant advertises that they use "fresh, never frozen" beef (or anything else), by law it can't ever be frozen.
