What are sausages made of, and why do they taste sooo good?!

Question:

What are sausages made of, and why do they taste sooo good?

I think they use intestines for the casing, so if that's the case what other disgusting ingredients go into making a sausage?

Answers:

They also use a "fake" collagen casing instead of intestine. Sheep intestine would be used for smaller sausages and pig for larger varieties.

There are also non-edible skins and they are usually used on Salamis or summer sausages. The variety of sausage world wide in stunning. Making it is not as hard as you might think. Can cost a bit if you want to use electric grinders, stuffers, mixers etc.
