They are best eaten when young, and fresh. If they are eaten after being picked a few days previous they start to lose their vitamin content.

They are highly nutritious and high in dietary fibre. This is the the list of nutrients:

vitamin K, manganese, vitamin C,vitamin B1(thiamine), folic acid, vitamin A, tryptophan, phosphorous, vitamin B6,protein, vitamin B3(niacin), magnesium, vitamin B2(riboflavin), copper, iron, zinc, potassium.
