If cheese matures for years...?

Why does it go out of date afer a few weeks?


Answers:

Hmm good question. I think possibly it is because that if the cheese were sold as it was made and wrapped in say greaseproof paper it would not then have to have a date on it. Although Brussels insists in loads of stupid rules.

However, I think that it is because it is wrapped in polythene in the supermarkets, and this does not allow the cheese to breathe so to speak.

Problem is, is that the shopkeepers have to be protected, as quite a few years back there were some outbreaks of Listeria from soft cheese products. Although soft cheese does not have a long shelf life like say Cheddar, Stilton, etc.
