Howdy,

I suspect it's simply a custom. Like relaxing after a hard day's work, dessert is a luxury. Luxuries are enjoyed only after a person completes their duties. At least, that's what a lot of people think.

Ah, but hold up. The Food Timeline (link included below) writes that "food historians tell us the practice of ending a meal with something sweet probably had something to do with ancient medical ideas regarding digestion." The site goes on to explain that these ideas continued up until the 19th century with the "genesis of modern nutrition science."

So, maybe there is a health benefit to eating banana splits last. Good to know.
