Beef heart is still beef and has the same nutritional value as any average cut of beef. The main thing is to be sure to cut off any fat that will be attached to the outside, same as you would do with any cut of beef.
Some people think that because it's an internal organ it isn't any good, to which I say "it's the heart, the strongest muscle in the body! How can it be bad?" I have grilled it, broiled it, used it in stews and stirfrys. It can be used in just about any way you would use steak or stew beef. The only difference is that, because it is an internal organ, there is an unusual smell, unlike what you get from a regular cut. This goes away with cooking and is no big deal.
