Which sounds better for my appetizer?!

Question:

Which sounds better for my appetizer?

I am making a pinwheel appetizer... my own recipe
Chive & Onion cream cheese
Turkey - should I used chunks or slices?
Cheese - chedder or mozzarella?
And the most important....
sun dried tomato or roasted red pepper?

and should I add anything else???

Also-
Making one with

Veggie cream cheese
Ham- sliced or chopped
green onion
chedder cheese- shredded
should I add anything else?
Maybe sundried tomato in one & red pepper in the other? or black olive with the ham one?

HELP!!!

Answers:

I would use turkey slices - they'll roll up easier. And I'd go with cheddar - turkey is a pretty mellow meat, so you'd want a cheese with a little bite to it. Mozzarella is too mellow to go with turkey. I'd use the red pepper in that one.
On the other, I'd use mozzarella instead of cheddar (goes better with the ham) and use the sundried tomatoes.
