I noticed that the ingredients in my microwave dinner had "reconstituted" potatoes. What is "reconstitute!

Question:

I noticed that the ingredients in my microwave dinner had "reconstituted" potatoes. What is "reconstituted"?

Answers:

It means that they were dehydrated (water removed),
usually by flash-freezing, then water was re-absorbed,
probably when the other ingredients were re-heated.

You're paying a lot of extra expense for processing,
when using real natural ingredients would be better,
& in the long run faster as well as cheaper.

By that, I'm referring to the total energy invested.
