Why doesn't cheese have a lot of carbs? but milk has a lot?!


Question:

Why doesn't cheese have a lot of carbs? but milk has a lot?

cheese is made from milk, but cheese has no or very little carbs? any particular reason why? does all the lactose go away during the manufacture of cheese? Thanks.


Answers:

It is because of the lactose content. Milk has about 11g of lactose per cup while cheese has about 1g per ounce (depending on the cheese). The older the cheese, the less lactose it has. This is because the lactobacteria within milk products have time to turn the lactose within the cheese into lactic acid.
