Living Lettuce?!

I was cleaning out my fridge and I found a living lettuce (you know, the kind with the rootball still attached) that I had bought over two weeks ago and forgot about. It still looks as fresh as the day I bought it. How does this stuff stay green for so long and I'm assuming it's ok to eat it?


Answers:

You have almost answered your own question. It still looks fresh because it is still living! The rootball is able to absorb a little moisture and so continues to live although probably not for much longer. If it still looks and smells fresh, eat it! It should be great.
