How to store cooked bacon- does it have to be refrigerated?

I need an official website or telephone number that would know how to store cooked bacon. I am having a disagreement with someone in the food service industry. They routinely leave cooked bacon in a pan, covered with plastic wrap, out on the counter- sometimes up to a week or more. They claim you don't have to refrigerate it and that it makes the bacon soggy. I say it must be put in the fridge as the fat can become rancid. Opinions don't work, I need an official website I can print off that specifically lists cooked bacon storage or a phone number to call. Thanks in advance.

To clarify, I don't mind opinions, just didn't want a bunch of people going "Yuck" or telling me their own food stories. Opinions that point me in the right direction are helpful and wanted! :)

Call your local health department. They can provide you with their "official" response to your question.

I have worked in the food industry and have taken the local Food Safety Certification courses. I live in Texas, and in the FSC manual that I have, it states that cooked bacon must be refrigerated. It should not be left at room temperature for more than 2 hours unless it has been treated with a preservative.

I know you did not want an opinion, but I cannot locate an official website. That's why I mention for you to contact your local health department.
