Marinating meats for bbq'ng etc....?
Is it correct that meat will absorb the flavour of the marinade quicker if at room temperature?
If so, is this not a health risk in warm weather?
Or is is best to marinate and leave in the fridge (but for a longer time)?
Help - tips - advice please!

Just soak the meat in your marinade, and put it in the fridge-it's best to be safe, especially if you are feeding a few people, you don't want a dose of tummy upsets on your conscience.Obviously the longer you can leave it the better.
