How do you know when pancake mix is expired?
We havethis coffee and chocolate pancake mix and I opened it today .When I took off the price tag, it had the sell by(expiration) date under the price tag and it said April 2003, but I think it might be April 2008.Anyway I made the pancakes and it burned really easily, is this a sign that the pancakes are expired?

My dad bought it like 2 weeks ago. It might have been in the store for so long, because the price tag covered the expiration date so maybe no one noticed...

A sure sign it is old is when you see webs and small mealy worm bugs and/or tiny moths - - otherwise it should be ok as long as the flavor isn't musky/stale tasting. Probably the reason they burned easily is because of the chocolate - most likely has more sugar in the mix than just plain - try keeping the heat a little lower and cook a little slower.
