Lunch ideas - so tired of sandwiches!!?

any easy, inexpensive meal ideas i can bring to work?


Answers:

Ramen soup with a boiled egg and some shredded cabbage (the hot water will cook it a little bit).

Luncheon salad -- some lettuce with extra veggies, cheese and meat (if you like it). Keep the dressing in a little, seperate bottle.

Croquettes -- take mashed potatoes and add some protein and veggies. I recently made them with tuna and corn. Dip in egg, then dip in Japanese bread crumbs (panko), then bake at 400 F/200 C for 15 to 30 minutes, until golden. (Use a greased tray.) Then you can warm up the leftovers in the microwave at lunch time. Great with some soy sauce on top!

Japanese rice balls or rolled sushi -- these are meant to last at room temperature, although you have to be very careful if your room temp is quite hot. Not good for a person on a low-sodium diet.

Yogurt and fruit with some whole wheat crackers (great for summer days when you aren't that hungry).
