Being a former chef I have worked with about 10 different varietys, and in France we had over 100.
It is soft like cream cheese, hard like romano, crumbley like feta, aged like cheddar, bleu veined like Roquefort, stinky like limburger, and on and on.
It can be served or made into all courses, is nice with fruit, on meats, in soups and as a dessert in a cheesecake like mousse or baked with figs or apples in a flan.
In the US, it is still a bit of a novelty, here in Canada we have many made from Goats milk, I go to my Greek market and get the most heavenly Bulgarian Feta made from it and it is like a cloud, I made a savoury cheesecake for one of my restaurants and we could not make them fast enough.
Enjoy it in as many forms as possible as it will be something you never forget.
