First of all, recognize that cravings are different from eating to satiate hunger. We do tend to choose certain foods to satiate hunger, but the brain mechanisms which control the desire to eat and the desire to fulfill cravings are different.
There's a thing called "mouth feel" which is just as important to food cravings as anything else. It has to do with the texture of a food. Two of the most common are the craving for something crunchy, and the craving for something smooth and creamy. People who crave something crunchy often opt for something like crackers or small hard candies which can be crunched. Cucumbers would probably fall into that category, as I know that sometimes I don't want to eat anything but crunchy stuff, and will eat a lot of potato chips, or cucumber chips, or mini carrots--basically whatever is on hand that produces a satisfying crunch. When a person wants the smooth and creamy stuff, they may opt or pudding or yogurt.
I suspect you are craving them as much for their texture as for their actual taste. It's perfectly normal, and in women, food cravings can have to do with hormonal levels--I know I crave certain foods when I am ovulating and when I am menstruating. It just has to do with what's going on in your brain at the time, and the satisfaction of the craving.
Since cucumbers are better for you than most of the crunchy foods out there, don't worry about it--eat away!
