I think you're confusing "old" with "aged". Old is generally not too good! Aged is excellent! Aging is a process that is monitored closely, but the meat is store 3 to 6 weeks at a temperature between 34 to 38 degrees and in low humidity. During this time it undergoes an enzymatic change that intensifies the flavor, deepens the color and tenderizes the meat by softening some of the connective tissue.
