How long should I boil an egg for "soft-boiled eggs"?
I want to keep the yolk similar to an over-easy fried egg.

This isn't too hard!
I'll give you a little more info - cooking times for the different egg sizes.
The egg size is always on the egg carton. The carton also has an expiration date. Its a good idea to check that, too.
This is not an exact science, but its pretty close.
Please use a timer for all egg sizes.
To cook Soft-boiled eggs using Medium-size eggs: cook 3 to 4 minutes.
Large eggs: cook 4 to 5 minutes.
Extra Large Eggs: cook 4 to 6 minutes
Jumbo Eggs: cook 5 to 7 minutes.
Why the different times?
1] Within each size of egg, the eggs, themselves, have slightly different size eggs.
2] Many people prefer different degrees of doneness. Its a mater of taste - and a little experimentation.
For any particular size egg,
1] Put cold water on the stove, add some salt
(the amount is up to you OR no salt, if you prefer);
2] Bring to a boil;
3] Using a spoon, gently put the eggs in the boiling water - all the way to the pan‘s bottom. IF you put them on the spoon and drop them at the water‘s surface, the egg(s) may crack or break.;
4] THEN start your timer.
5] When timer sounds, remove the pan and eggs. THEN drain the boiling water.
6] To make the eggs easier to handle and work with, run cold water over the eggs for a few seconds.
7] Crack open, scoop-out the eggs and enjoy!
Egg white STILL "runny" and a little too raw?
NEXT time, cook the egg about 1 minute longer.
You aren’t looking for a REAL mess to clean up, are you? Of course not. Then PLEASE DON'T put the rest of the eggs in the microwave!
The egg(s) may explode.
Eggs too well done - the yolk started to cook or is cooked? Reduce the cooking time by a minute or so.
With a few tries, you should get the degree of "soft-boiled" you like.
