Is it safe to eat steak EXTRA rare, or raw in the middle?!


Question:

Is it safe to eat steak EXTRA rare, or raw in the middle?

I like my steaks Black & Blue, moreso than is usually common.
I like the outside a bit charred, while the inside is completely uncooked, almost cool inside.
I was just wondering if this is unsafe. I know bacteria can grow on the outside of the steak, so if that's cooked, is the inside still dangerous?


Answers:

You should be fine if the steak was properly refrigerated and cut.

The bad bacteria (salmonella, e. coli... etc) are on the outer surface of the steak, not in the meat itself. The bad bacteria are destroyed at 140F to 160F, since the steak is charred on the outside (cooked at high temperatures), then you should be fine.
