Has anyone ever tasted chicken so good, it made you want to slap your momma?


Answers:

Dunno 'bout wanting to slap my momma, but it was pretty much a religious experience.

1 5 lb roasting chicken
16 oz India Pale Ale or medium-bodied beer
1 head of garlic
2 tbsp lime juice, preferably fresh-squeezed

Remove giblets from chicken, rinse out well
Separate the head of garlic into cloves, peel the paper off and smash all but 3 or 4 of the largest ones with the side of a heavy knife.
Crush the 3 or 4 largest cloves with a garlic press or the side of a heavy knife.
Season the chicken inside and out with salt & pepper
Rub the crushed garlic all over the inside of the chicken.
Place the chicken in a gallon-sized ziptop bag. Pour in all the beer, the lime juice and smashed garlic cloves. Seal up and refrigerate at least 2 hours, but preferably overnight.

Preheat oven to 375'
While oven is heating, remove chicken from marinade and place on a rack in a roasting pan. A cake rack works great for this but if you don't have one, it's not a big deal.
Roast the chicken at 375' at 20 minutes per pound or until the self-activating temp gauge pops up. Baste the chicken with the marinade every 30 minutes during cooking. Discard leftover marinade.

Allow chicken to rest for 10 minutes before carving - if you can stand it! A guaranteed phenomenal chicken experience. Momma-slapping left to your own discretion.
