does anyone know what kind of cheese it starts out as before it molds???

Blue cheese starts out as just milk curds, and it depends on the region it's from as to what animals milk it is. The mold spores are injected into the pressed curds on the cheese is aged. Get this!! Blue cheeses are named for caves in which they are aged! That's right, they are only aged in caves per tradition. i.e. Roquefort is from an area in France with caves that have a desirable temperature year round, and it is very expensive blue cheese!!
