I have a recipes for Upside-Down Berry Cornmeal Cake. It calls for 1/2 cup of corn meal. Can I substitute Corn Muffin Mix for corn meal? I don't want to buy a whole bag of corn meal for one recipe.

No, the muffin mix has a lot more in it than just corn meal. Try going to the organic section, you can get smaller bags of cornmeal. Keep the leftover cornmeal in the freezer, sealed in plastic, to keep it fresh for the next time you need it.
