The Leaves of the Rhubarb plant are poison so we do not eat them. The stems are not poison and have a delicious sweet - tart flavor, When combined with sugar, cooked then placed in a pie crust or canned they make a delicious dessert or jam to spread on bread or served over vanilla ice cream.
