Fresher & longer-lasting bread???!

Question:

Fresher & longer-lasting bread???

Which way does bread (& other items such as bagels, etc) stay fresher for longer?? In a refrigerator or sitting out on the counter (still in the plastic of course) at room temperature????

I've been keeping a loaf in my fridge handy for those few times when I wanna make sandwiches for lunch for work but I'm always so paranoid about taking it out one day & seeing mold on it.....same with the bagels for my breakfast.

Also, once I make a sandwich (in the morning) obviously it has to stay in the fridge so that the meat, cheese & other stuff doesn't go bad but then the bread feels & tastes so dry & gross once lunch time rolls around. Is there a way to prevent that??

When I make my sandwiches for work I keep them thoroughly-sealed in a ziploc bag....1 bag per sandwich.

The bread is still being used...just not every day. Maybe every couple days or a lil longer...basically when I don't feel like having soup & wanna make a sandwich instead.

Answers:

Two separate issues...

1. If you're solo, and don't want to have stale bread, divide the loaf in half and freeze one half. Use the frozen half within a month (let it thaw out on the counter). Same goes with a dozen bagels. Freeze half for when you need them.

2. Sandwiches are a real problem. What I do is pack my meat and fixings separately from my bread and then assemble all the ingredients at lunchtime.
