I have a cookbook that's been passed down in my family and I absolutely love to read it. LOL, everything was cooked with fat and lard back then. This is The Modern Family Cookbook - copywright 1953. Forgive any typo's since I'm actually typing this out of the cookbook and not copying off a site.
Deviled Egg Sandwiches
5 hard cooked eggs
2 tablespoons mayonnaise
Salt to taste
Prepared mustard
10 slices buttered bread, using 1/3 cup butter
5 leaves lettuce or 1 bunch watercress
Shell the eggs and put them through a ricer or sieve. Mix thoroughly with mayo, salt and mustard, then spread on 5 of the bread slices. Cover with lettuce or cess and lay remaining slices of bread on top. 5 sandwiches.
Hamburger Noodle Casserole
2 tablespoons butter or bacon fat
3/4 lb ground beef chuck
1 medium onion, sliced
1 cup water
1 cup canned tomatoes
1 teaspoon salt
1 No. 2 can peas
8 oz. noodles, cooked until tender
Heat butter or bacon fat in skillet, add meat and stir until very lightly browned. Add onion, water, tomatoes and salt; cover and simmer for 30 minutes, stirring occasionally. Add peas with their liquid and cooked noodles; and cook uncovered, stirring frequently 10 to 15 minutes longer or until as much of the liquid as desired has evaporated. Add more seasonings if desired and serve hot.. 5 servings.
Cheese Toasties
1/2 pound American cheese, grated
1 teaspoon prepared mustard
2 to 4 tablespoons milk
Dash salt
6 hamburger buns
Butter
Mix grated cheese with mustard, milk and salt. Split buns in half, toast or not as desired, and spread cut surfaces with butter and cheese mixture. Place under broiler and toast until cheese is puffy and golden brown. Serve hot. 5 or 6 servings.
