Why is our Sun Tea turning into syrup?!

Why is our Sun Tea turning into syrup?

We make Sun Tea at my work. Lately it has been turning into a syrup like substance and is undrinkable. Very thick, gooey. We make it with filtered water, normal tea bags, and 3/4 of a day worth of sun (about 6hrs). Sometimes it's fine in our fridge for a couple days, this last batch didn't last til overnight without turning into syrup. Can't find any info on the net. Anyone have a similar experience, and maybe an explanation or suggestion on how to avoid???

Don't drink sun tea, ever. News broke earlier this year that any suntea, even if in an airtight container, is at risk of brewing deadly bacteria. Several people have died from it in multiple cases.
