When I was a kid, milk standed three days before becoming undrinkable, them my mom used to make ricotta cheese of it.
Now milk can stay one month, after it, it just becomes something auful, impossible to make ricotta of it.
What happened to the milk?
Why humanity drinked whole milk for thousands of years as a healthy thing and now it's a sin if you buy 3% or 3.25% milk?

As far as I know Pasteurization doesn't make milk stand for 30 days, neither it avoids milk to become Ricotta. It just kills some of the bacteria present at the moment of pasteurization. Homogenization is done because when you mix milk from many different cows it will not stand for even one day before decomposing. I saw Ricotta made from pasteurized and homogenized milk. Today's milk has something else.
