You often see how food, like candy bars, are made. But how do they keep all the mixers, assembly lines, and conveyer belts from growing bacteria. They are often made of diverse materials, like cloth; or they have many cracks and crevasses that appear difficult to clean.
Answers:
For the most part, those companies making very large quantities of food have several production lines with identical equipment. This serves at least two purposes:
1] In the event a piece of equipment breaks down, one or more of the other line picks up the slack and continues production.
2] On a frequent basis, the equipment has to be thoroughly cleaned and sanitized. When this happens, other production line[s] continues production.
Cleaning and sanitation is usually done with specially formulated, food-friendly liquid compounds. The use of these cleaning compounds assures the equipment will be thoroughly cleaned and sanitized.
