How long can pepperoni slices be stored in the refrigerator?!


Question:

How long can pepperoni slices be stored in the refrigerator?

I have an opened package of pepperoni slices that, while it is wrapped fairly tight, has been there for a couple of months. Do you know if it is still good to use?


Answers:

If the package hasn't been opened then pepperoni, in my opinion, has the shelf life of granite.

Seriously.

We refrigerate our smoked sausages here in the states. You won't find that is customary or usual anywhere else, including where italian smoked meats come from. Everywhere else these sausages hang out on counters with only the cut ends
covered.

And, remember smoked meats must be aged in order to get that flavor.

Only in the States do people believe that food is only good for a few days, that is has to be sealed in air tight containers and that if it isn't absolutely fresh then it isn't fit to eat.

Not a tirade here, and do what you will according to your own ideas about sanitation and germs and whatever but keep in mind that preserved foods were all that we had at one time.
