Understanding oils?

im just learning to cook, and im quite confused about the types of oils to use. my first question is, whats the difference between the oils. What kind of oils are best used for salad dressings and can these same oils be used for cooking? is any particular oil good for you or are they all bad for your health? i went to the shops and there is "vegetable oil", "canola oil", "extra-virgin olive oil", "olive oil", "virgin olive oil", i just stood there for like 20 minutes stunned. please help.


Answers:

Wow...okay.

Vegetable, Soy, Canola, Olive Oil, Peanut Oil are all good for frying.

Extra Virgin Olive Oil is for salad dressings, drizzles, bread dippers, finishing, etc.

Truffle oil is super expensive, and made from a mushroom. This is reserved for only very special stuff like drizzles on lobster dishes, or on a super special salad...

Coconut oil, olive oil, flax oil, are all very good for you.

Some oils are especially for their flavour, like walnut oil, almond oil, coconut oil, extra virgin olive oil...

Lard, crisco, and any hydrogenated oil is really bad for you and your cholesterol (and arteries)...
